"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 c. cream style corn
3/4 cup sweet milk
1/2 tsp. soda
1/2 c. melted shortening or oil
1 c. yellow corn meal
1 egg
1/2 tsp. salt
canned chopped green chilies
1/2 to 3/4 lb. grated cheese

Directions:
Directions:
Mix first seven ingredients into a thin batter. Spread half in a greased 8x8" pan. Cover with green chilies--the more the spicier. Spread grated cheese over this, covering completely. Pour remaining half of batter over this layer and grate more cheese over the top. Bake at 400 for 30-40 minutes or until firm.

Personal Notes:
Personal Notes:
Sometimes I make a variation of this with an el-cheapo cornbread mix. Also, I don't have an 8x9" pan so I use my 9x9" pan with fine results.
