2 Lbs Red snapper steaks 3 Tbs orange juice 1 Tbs grated orange rind 5 Tbs butter or margarine, melted 1 tsp lemon juice salt and pepper to taste dash of nutmeg parsley
Place steaks in a single layer in a well greased baking pan. Combine the remaining ingredients and pour over fish. Bake in 350ºF oven 25-30 minutes or until fish flakes easily when tested with a fork. Remove to a heated serving platter, pour any sauce remaining in the pan over the fish and garnish with parsley.
