1/2c soft butter
1/2c brown sugar
1 egg yolk
1 egg white (maybe 2)
1/2tsp vanilla
1c flour
1/4tsp salt
crushed pecans

Directions:
Directions:
Cream butter, brown sugar, yolk, and vanilla together. Sift and blend flour and salt into batter. Roll into balls. Coat balls in egg whites and then roll in nuts. Bake on an ungreased cookie sheet for 5 minutes at 375. Press wells into cookies then bake for another 8 minutes. Frost the wells when cooled.

These cookies were my absolute favorite as a child. The nuts work best if pulverized in a food processor... very fine. These are great to make with kids to help. My grandmother would make the dough, grandpa would roll the balls, and I got to dip them in egg and roll in nuts... it was so much fun!
