11/2 cups pinapple juice
3/4 cup apple sauce
8 egg whites
1 pkg yellow cake mix
1 small pkg lemon jello
2 tsp gragted lemon rind
1/2 c fresh lemon juice
1/12 c powdered sugar

Directions:
Directions:
Preheat oven to 350. Coat on 81/2 x 11 pan with cooking spray. In small saucepan simmer pinapple jice until reduced to 3/4 cup. Mix apple sauce and eggwhites in large bowl. Stir in yellow cake mix, jello and lemon peel. Slowly drizzle in reduced pineapple juice. Beat with mixer 5 minutes. Pour in pan and bake 30-40 min.

Meanwhile, mix lemon juice and sugar till smooth. Remove cake from oven and poke toothpick holes all over top. Pour lemon sugar mixture over hot cake.
