12oz Manicotti Shells (really 2 boxes)
32oz Ricotta Cheese
3c shredded mozzerella (12oz)
1/2c parmesan cheese
2 eggs
a handfull of spinach
1 crushed garlic clove
1tsp salt
1/2tsp black pepper
marinara/spagetti sauce

Directions:
Directions:
Cook shells according to package and drain (it's easier to fill them if they are a little undercooked). In a large bowl combine ricotta, 2c of mozzarella, parmesan, eggs, parsley/spinach, garlic, salt and pepper. Mix thoroughly. Spread enough sauce to cover the bottom of a baking pan. Fill each shell with the cheese mixture (I just use my fingers but some use a pastry bag). Preheat oven to 350 Place the shells in the pan, cover with sauce and cover with cheese, dust with parmesan. Cover pan with aluminum foil and bake for 40 minutes. Uncover and bake for another 10 minutes or so. Let stand for about 10 minutes out of the oven and serve.

This recipe usually makes a ton of food!!! Two large pans. I often freeze a few smaller pans of this to have later. Makes a great dish for dinner parties.
