1/2 c sugar
3 1/2 T cornstarch
2 1/2 c milk
1/2 c crushed pineapple drained
1 t vanilla
1/4 t salt
1/2 c flaked coconut
3 egg yolks
1 banana
1 9" baked pie shell
cool whip

Combine sugar, cornstarch, salt & coconut in heavy saucepan or double boiler. Add milk and stir constantly until thick. Add some cream mixture to egg yolks. Add to cream mixture and continue to cook unntil thick. Add pineapple & mix well. Add vanilla and remove from heat. Let cool and slice banana into filling. Pour into prebaked pie shell & top with cool whip. Garnish w/coconut.
