6 Tbsp Butter
2 1/2 Tbsp Olive Oil
1 Onion Chopped
1 Carrot chopped
1 celery chopped
2/3 cup bacon chopped
3/4 cup minced pork
3/4 cup minced beef
1/4 cup sausage meat
2/3 cup white wine
Salt & Pepper to taste
4 Tsp. Tomatoe Paste
1 1/4 Cup Stock
4 Tbsp Cream or Milk

Heat 1/2 butter & olive oil in frying pan add onion, carrot, celery & bacon
Fry on low heat
Add Meat Fry till brown
Crumble with fork
Moisten with wine & cook
until evaporates
season w/salt & pepper
Dilute Paste with stock
stir sauce
Cover and cook slowly gradually add rest of stock 1 1/2 hours
Stir in cream & additional butter.
