5-6 tomatoes, diced small (choose a variety of tomatoes, plum, vine ripen, yellow, heirloom) ½ red onion, diced small 2 jalapeño peppers 3 cloves garlic, minced 3-4 Tbsp cilantro, chopped 1 lime, juice of and zest 1 tsp sugar Salt Pepper
Mix all of the ingredients in a bowl and let set for 4 hours to allow flavors to mix.
To make hotter add more jalapenos or other hot peppers.
