regular size flour tortillas,
1 egg per tortilla,
Grated cheese - cheddar, or blend - mexican blend is good,
salt or onion salt,
pepper.
optional - green onion or red pepper chopped small

Directions:
Directions:
Preheat oven to 425. On large cookie sheet or low sided pan sprayed with Pam place one or two tortillas, (preferably not touching so they don't stick together) then put grated cheese on top of each tortilla in a mound. Then spread cheese into a ring shape leaving a 3 inch hole in the center. Make sure you have enough cheese to make a wall that will hold the egg and press the cheese down lightly. Break egg in the hole and add desired seasonings. Bake 8 to 10 minutes until egg white is set. Serve! I like to eat it cut like a pizza in wedges.

If egg white starts leaking before cooking just shore it up with a little more cheese and pack gently!
