1 LB fresh in bulk or 1 -1Ooz package spinach
3 Tbs. of butter or margarine
1/2 LB of mushroom cut into ¼” thick slices
Salt and Pepper
1 tsp. finely minced garlic

Directions:
Directions:
Bring enough water to boil to cover spinach when added. Add spinach and cook; drain well; when cool enough to handle extract most of the moisture. Chop coarsely. Melt 2 Tbs. of butter in skittle. Add mushroom and S/P to taste. Cook stirring often over high heat until mush are brown. Add remaining butter and spinach, cook stirring about 30 seconds. Sprinkle with garlic and stir. Serve hot.
