1 c. chopped celery
1 c. chopped onion
1/2 c. carrots, diced small
1 c. finely chopped mushrooms

2 c. cut up chicken breasts
1/4 c. flour
3 T. oil

1/2 c. butter
1/2 c. flour

4 c. half & half

6 c. chicken broth
2 c. water
1 c. Minnesota wild rice

2 t. fresh rosemary, finely chopped
2 t. fresh parsley, finely chopped
2 t. fresh thyme, finely chopped
2 t. fresh sage, finely chopped
2 t. granulated garlic
2 t. salt
1.5 t. White pepper
1.5 t. Black pepper

1.5 c. grated Swiss cheese

Saute 4 T. butter, celery, onion, carrots, and mushrooms for about 7 min; set aside. Shake up the chicken pieces in 1/4 c. flour and saute in oil for about 7 min; set aside. In a large pot, boil rice in water and broth and spices for 45 min (covered). While the rice is cooking melt 1/2 c. butter in another pot and make a Rue with 1/2 c. flour, add half and half, stir until thick and bubbly. When rice is cooked, add the cooked vegetables, chicken, and white sauce. Stir in the grated cheese. Garnish each bowl of soup with paprika, fresh parsley, and some more grated cheese.

I tasted this soup at a training I had over 7 years ago. I asked the caterer for the recipe and she gladly shared it with me. The first taste will have you digging in for more. It's a pain in the butt to make, but well worth it! I make this soup every Christmas Eve for our family.
