2 c. cooked corn
1 avocado, diced into 1/2" pieces
1 pt. cherry tomatoes, halved
1/2 c. finely diced red onion
2 tbsp olive oil
1 tbsp fresh lime juice
1/2 tsp lime zest
1/4 c. chopped cilantro
1/4 tsp salt
1/8 tsp fresh ground black pepper

Directions:
Directions:
Place corn in a large bowl. Add avocado, tomatoes, and red onion. In a separate bowl, whisk together the remaining ingredients. Stir the vinaigrette into the salad and serve. Yield: 4 to 6 servings.
