3 T. cornstarch
1 1/2 c. sugar
1/4 c. Lemon juice (fresh squeezed)
1 T. grated Lemon rind
1 1/2 c. Boiling water
1 - 9" Baked Pie shell
6 T. sugar for meringue
1/4 tsp. cream of tatar for meringue
3 eggs separated

Combine cornstarch, sugar, lemon juice and lemon rind. Bet the egg yolks and then combine with the conrstarch mixture. Gradually add the boiling water and heat over medium heat bring to a boil and boil for about 4 minutes. You will notice the liquid change to a clearer color. STIR CONSTANTLY. Pour into the pie shell.

Beat the egg whites until semi-stiff and then gradually add the 6 T. sugar little by little and the cream of tatar.

Brown in the oven at 350 degrees

If you want a fancy looking pie separate a couple of extra eggs and discard the yolk. Use the extra egg whites in making the meringue adding 2 T. of extra sugar per extra egg white. This will give you taller meringue and that restaurant look!
