cup stone ground wheat cracker crumbs
cup finely chopped walnuts 3 tablespoons butter or margarine, softened
8 slices bacon
1/2 cup chopped onion
3 packages (8 ounces each) light cream cheese, softened
3 eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
Shredded carrot, carrot curls and parsley sprigs

Place spring-form pan on baking sheet for support. Coat lightly with no-stick cooking spray. In small bowl, combine cracker crumbs, walnuts, and butter until well blended. Place half of crumb mixture in pan. Using back of large spoon, press crumbs evenly on bottom of pans. Bake in 350F. oven for 10 minutes; cool on rack. In medium skillet, cook bacon until crisp. Drain, reserving 1 tablespoon of the drippings. Crumble bacon; set aside. Cook onion in reserved drippings over medium heat until soft; set aside. In large mixer bowl, beat cream cheese. Gradually add eggs, garlic powder, and red pepper; beat until smooth. Stir in onions and crumbled bacon. Add mixture to pan; spread level. Bake in 350F. oven for 35 to 44) minutes. Cheesecake will be almost set and cracks will form on top. Cool completely. Cover and store in refrigerator. Just before serving, remove foil sides. Garnish with shredded carrot, carrot curls, and parsley. Serve at room temperature with crackers.
