Basil Vinaigrette Dressing

cup olive oil
2 tablespoons butter, mixed with 1 T. basil
1 tablespoon vinegar

In food processor bowl with metal blade or blender container, combine all ingredients. Process until smooth. Store In refrigerator. 2/3 cup.

8-oz. pkg. fresh or frozen spinach tortellini
4 oz. (1 cup) mozzarella cheese. cubed
cup Basil Vinaigrette Dressing
2 tomatoes, peeled, chopped, drained

In food processor bowl with metal blade or blender container, combine all ingredients. Process until smooth. Store In refrigerator. 2/3 cup.

Cook tortellini to desired doneness as directed on package. Drain; rinse with cold water,
In large bowl, combine cooked tortellini and cheese; add Basil Vinaigrette Dressing. Toss to combine. Cover; refrigerate I to 2 hours to blend flavors. Just before serving, mix in tomatoes.
