4 tomatoes - peeled
6 tbsp chopped fresh parsley
1 garlic clover, crushed
6 tbsp olive oil
2 tbsp cider vinegar
1 tbsp salt
1/2 tsp dried leaf basil
1/8 tsp pepper

Cut tomatoes into medium slices
Place in 9x13 inch pan
Sprinkle with parsley
Mix other ingredients.
Pour over tomatoes and parsley
Chill 3 hours or overnight

4-6 servings
