3 lb. yellow squash, peeled & sliced 1/2 c. onions, chopped 2 eggs 1 1/2 tsp. salt 1/2 tsp. pepper 1 stick butter 1/2 c. cracker crumbs
Preheat oven to 350º. Boil squash until tender; drain thoroughly and mash. Combine all ingredients, except 1/2 stick butter and cracker crumbs. Pour into a baking dish approximately 1 1/8" deep. Melt remaining butter and mix with cracker crumbs; spread over top of squash. Bake for 1 hr. or until brown on top.
