1/3 cup olive oil
1 Tbsp lemon juice
1 1/2 tsp garlic powder
6-8 chicken breasts (skinless and boneless)

Serve with Lemon Rice, see recipe in Side Dish section.

Directions:
Directions:
Combine the oil, lemon juice, and garlic powder.

Place chicken pieces into zip top bag. Pour in oil mixture. Allow to marinate at least 30 minutes before cooking (or bring from home at this step).

Using a large non-stick skillet, pour in excess oil into pan on a medium heat. Cook chicken about 6 minutes per side.
