3 - 15 oz cans tomato sauce
1 - small can green chiles, drained (optional)
1 - small can of sliced black olives, drained (optional)
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp cumin
1/2 tsp ground oregano
1/4 tsp pepper
1/4 tsp salt
dash (less than 1/8 tsp) cayenne pepper - if desired
1 - 1 1/2 lbs of chunk chicken in envelopes or canned

2 cups uncooked long grain rice (such as jasmine)

Directions:

In large pot or large non-stick skillet with a lid, combine all ingredients but rice over medium heat. Bring to a boil. Stir in rice, bring to a boil again, then reduce heat to a simmer, and cover.

Let simmer approximately 15 to 20 minutes or until rice is cooked.
