In a large pot bring to boil:
1/2 cup water
clam juice from 3 cans
1 cup diced celery
1 cup yellow onion
2 cups diced potatoes

In a separate saucepan mix:
3/4 cup butter
3/4 cup flour
1 tbsp sugar
2 tsp salt
Pepper to taste
Mix until smooth and then slowly add:
4 cups half and half
2 cups whole milk

Directions:
Directions:
Boil top ingredients in a large pot until tender. Meanwhile mix lower ingredients in a saucepan until a nice white sauce is formed. Add the white sauce to the boiled ingredients once they are tender. Add clams from 3 cans. Simmer on low until serving.

We love this rich clam chowder and have often had it for Christmas Eve dinner. It's not low fat so once a year may be all we should have it but we do really enjoy the indulgence.
