1/2 chopped red pepper
1/2 chopped green pepper
1/2 chopped onion
2 cloves minced garlic
1 T. olive oil
1 can black beans
2 bay leaves
1 tsp. sugar
1 tsp. vinegar
1 tsp. salt
water
cooked rice
strips of grilled chicken (opt.)

Directions:
Directions:
In a medium pot, saute peppers, onions, and garlic in olive oil. Stir in remaining ingredients adding enough water to make it a little-less-than-soupy consistency. Simmer 15 to 20 minutes. Remove bay leaves and serve over rice. Top with grilled chicken if desired when serving, but do NOT cook the chicken with the beans (grill separately).

This recipe sounds like won't have much to it, but it has an incredible flavor! Sometimes I have to add some more water after it's simmered.
