1 lb. extra lean ground beef
1 c. chopped onion
1 diced green pepper
5 c. thinly sliced zucchini ( about 3 medium zucchinis)
2 lg. tomatoes, peeled, seeded, and diced (or 15 oz. can of diced tomatoes)
1 T. pimento (opt.)
1 c. fresh or frozen or canned corn
1 clove minced garlic
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
parsley (opt.)

Directions:
Directions:
Brown hamburger with onions, add peppers and garlic and cook 2 to 3 minutes longer. Add remaining ingredients. Cover and simmer until vegetables are tender (about 10 to 15 minutes). Serve with crusty bread, hard rolls, or rice.
