8 burrito size tortillas
1 - 16oz bag shredded cheese (Mexican style recommended)
2 lbs pre-cooked chicken breast chunks or strips (southwestern or fajita flavor recommended)
4 Tbsp butter

Optional fillings:
Green chiles, sliced green onions, sour cream, salsa

Directions:
Directions:
Plan to cook 2 quesadillas at a time.

In a large non-stick skillet, add 1 Tbsp butter and melt. Make sure butter spreads over bottom of skillet evenly,

Dip 2 tortillas into butter, then add filling to each & fold in half. Fry in skillet to brown on both sides. Takes about 3 to 4 minutes per side. To serve, cut in wedges & offer salsa, sour cream, and other toppings for dipping.

Repeat for the additional tortillas.
