"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Preheat oven to 300. In large mixer bowl cream butter and sugar until light and fluffy...adding 1/2 cup sugar at a time. Cream until mixture no longer feels grainy. Blend in vanilla. Add in eggs, one at a time mixing well after each addition.

In a separate bowl, combine flour and salt. Add flour mixture to butter mixture a little at a time. Blend in buttermilk to finish custard. Sprinkle pecans in bottom of crust. Pour custard mixture over pecans. Bake 1 1/2 hours.

Personal Notes:
I suggest using a pie ring around the top of your crust to eliminate excessive browning. This is a "no-fail" pie I use at holidays.
