1 cup smooth or chunky peanut butter 1 cup white sugar 1 egg, well beaten 1 tsp baking soda 1 tsp gluten free vanilla
Mix all ingredients with electric mixer. Drop by rounded teaspoon onto greased or non-stick cookie sheet. Flatten slightly with fork; sprinkle with a little sugar. Bake at 350º for 8 - 10 minutes or until done.
