1 cup white rice (converted) 2 cans beef broth 1 stick butter 1 small onion (chopped) 6 fresh mushroom (sliced)
Saute in butter; onion and mushroom. Add rice and brown 2 minutes. Pour in casserole dish rice mixture and beef broth. Stir. Bake at 350º, uncovered, for 45 minutes or until liquid is gone and rice is tender.
