8 large fresh mushrooms
1 tbsp. olive oil
2 c. ricotta cheese
3/4 c. grated Parmesan cheese
3/4 c. shredded mozzarella cheese
4 tbsp. pesto

Directions:
Directions:
Preheat oven to 375. Wash mushrooms, remove stems, hollow out and brush inside and out with olive oil.

In medium bowl, combine cheese and pesto, reserving 1/4 cup of Parmesan cheese for later. Stuff the mixture into the mushroom caps. Arrange caps on a cookie sheet. Sprinkle the mushrooms with reserved Parmesan.

Bake 25-30 minutes or until cheese is bubbling and brownish.
