1/4 c olive oil
1 1/2 T fresh lemon juice
1/2 t hot sauce
Salt and pepper to taste
1 1/2 lbs. seedless watermelon, rind removed, frit sliced 1/4" thick
1/2 small red onion, thinly sliced
1/4 c coarsely chopped flat-leaf parsley
1/4 c. pitted Moroccan or other black olives, coarsely chopped
2 oz. feta cheese, crumbled (about 1/2 c)

Directions:
Directions:
In a small bowl, whisk the olive oil with the lemon juice and hot sauce and season with salt & pepper. Arrange the watermelon slices on a platter and sprinkle with the onion, parsley, olives and feta. Drizzle the dressing on top and serve.
