8 c. quartered strawberries 1 1/5 c. orange juice 1 1/5 c. apple juice 6 Tbsp sugar 3 1/5 c. vanilla yogurt 5 tsp finely chopped mint
Place first 4 ingredients in a blender and process til smooth. Pour puree into a bowl and add yogurt, stirring with a whisk. Cover and chill. Spoon 1 cup of soup into each bowl and sprinkle with mint. Yield: 12 servings.
