Peach Pie Recipe

1/3 c. melted butter
1/2 c. brown sugar
1 c. oatmeal
1/2 c. chopped nuts (we like cashews)

1 c. milk
1 small package vanilla instant pudding
1 small cream cheese (or half of an 8 oz. one)
1/2 tsp. almond extract
1 c. whipping cream (or Cool Whip)

Mix together melted butter, brown sugar, oatmeal and nuts. Spray pie tin with non-stick cooking spray. Press mixture into pie tin.

Mix together the milk and vanilla pudding. Add cream cheese and almond extract.

Whip cream separately and then fold into pudding mixture. (Or just fold in Cool Whip.)

Pour mixture over crust. Slice fresh peaches on top. Serve with dollop of whip cream or Cool Whip.
