1 c. pumpkin 1/2 c. oil 2 eggs 1/3 c. water 1 2/3 c. flour 1 1/2 c. sugar 1/4 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1/2 tsp. pumpkin pie spice 1/2 tsp. all spice 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 c. chopped walnuts
Preheat oven to 350º. Mix pumpkin, oil, eggs and water in a large bowl. Add flour, sugar, baking powder, baking soda, salt and spices; mix well. Stir in nuts. Spoon into 1 greased and floured loaf pan. Bake for 1 hour.
