Buy fresh sauerkraut in plastic bags or bottled.
1 oz. Dried mushrooms, soaked for 1/2 hour in 1/2 cup warm water (reserve the water)
3 Tbsp. butter
1 large yellow onion, peeled and diced
1 medium tomato, chopped
2 lb. Fresh sauerkraut, drained and rinsed
1 cup dry white wine
1/2 cup beef stock
1/2 tsp. freshly ground black pepper
2 Tbsp. flour
pinch of sugar

Directions:
Directions:
Drain the mushrooms; reserve the water and set aside. Coarsely chop mushrooms and saute in the butter. Add the onion and tomato; saute until the onion is clear. Add the sauerkraut, wine, beef stock, reserved mushroom water and pepper; bring to a simmer. Sprinkle the flour over the top of the sauerkraut and then stir in well. Simmer, covered, stirring occasionally, for 30 minutes. You may need to add a pinch of sugar.
