1 lb boneless, skinless chicken breasts
1 tsp dried parsley
1/2 tsp poultry seasoning
1 large slightly beaten egg
2 T milk
30 ritz-type crackers, finely crushed (1 1/2 c)
1/8 tsp salt
1/8 tsp pepper

Honey Mustard Dip
1/2 c mayonaise
4 tsp Dijon mustard
1 T honey

Directions:
Directions:
Cut chicken into 1 inch pieces. Combine flour, parsley, poultry seasoning, salt and pepper in Ziploc bag. Combine egg and milk. Put crackers in another bowl.

Add chicken, a few pieces at a time to the flour mixture, shake to coat. Dip flour coated chicken pieces, 1/4 at a time into egg and milk mixture. Roll the pieces in crackers. Place in a single layer on a large, ungreased baking sheet. Bake at 425 for 10-12 minutes or until chicken is no longer pink.

These are more work than frozen nuggets, but so much better than frozen or restaurant nuggets. They are super tender!
