1 lb. lean ground beef
1 (14.5 oz.) can chopped tomatoes
1 (10 oz.) can diced tomatoes and green chiles
1 (6 oz.) can tomato paste
2 tsp. sugar
2 tsp. salt
1/4 tsp. pepper
1 bay leaf
1 pkg. medium egg noodles
6 green onions chopped (1/2 cup)
1 cup shredded parmesan cheese
1 cup shredded mozzarella
1 cup sour cream
1 cup shredded cheddar cheese

Cook beef 5 to 6 minutes, stirring to crumble. Stir in chopped tomatoes, diced tom. and green chiles, tom. paste, sugar, salt, pepper, and bay leaf. Simmer 30 minutes.

Cook and drain egg noodles.

Stir together egg noodles, onions and sour cream.

Place noodle mixture in bottom of a lightly greased 13x9 baking dish. Top with beef mixture. Sprinkle with cheeses.

Bake covered with foil at 350 for 35 minutes. Uncover and bake 5 more minutes.

This is one of my family's favorites. It's also the meal I make for friends when they need a meal for their family due to a new baby or a crisis of some sort. Each time I have delivered this meal, my friends will call the next day and ask for the recipe. It seems to be a hit even though it's not really healthy! It's yummy and has a little kick to it. It also freezes well so I often make an extra casserole and freeze it for those nights when there is no time to cook.
