6 Medium Potatoes
3 Slices of bacon
1 Medium Onion
Salt
Pepper
1Tbs Sugar
1/2 cup Vinegar
Fresh Parsley

Directions:
Directions:
Cook 6 medium potatoes in their jackets in boiling, salted water until tender when pierced with a fork. When cool enough to handle, peel and cut into thin slices. Dice 3 slices of bacon. Take care not to brown the onion. Stir in 1 teaspoon salt, dash of pepper, 1 tablespoon of sugar, and 1/2 cup vinegar mixed with the same amount of water. Heat to a boil, pour over potatoes and toss gently. Serve with finely chopped parsley on top.
