1 cup diced smoke ham
2 celery ribs, chopped
1 medium onion, chopped
2 carrots, chopped
2 garlic cloves, minced
2 (15 ounce) cans black-eyed peas
2 (14 ounces) cans chicken broth
2 (14 1/2 ounces) cans diced tomatoes
1 (8 ounce) can tomato sauce
1-1/2 cups chopped fresh spinach
1/2 cup fresh parsley
1/2 teaspoon pepper

Directions:
Directions:
Saute first 5 ingredients in a Dutch Oven until vegetables are tender. Stir in peas and next 4 ingredients; bring to a boil. Cover, reduce heat, and simmer 1 hour and 30 minutes. Stir in spinach, parsley, and pepper.
