2 medium lemons
6 large eggs, lightly beaten
2 1/2 cups sugar
1/4 cup fresh lemon juice
1/2 cup butter, melted
1 unbaked pie shell

Directions:
Directions:
Grate rind from lemons: set aside grated rind. Remove and discard pith from lemons. Quarter and seed lemons. Combine lemon quarters, grated rind, eggs, sugar, and lemon juice in container of an electric blender; cover and process 1 minute or until smooth, stopping once to scrape down sides. Add butter; cover and process 30 seconds. Pour into pie shell. Bake at 350 for 40 to 45 minutes or until slightly firm in center. Cool on a wire rack.
