Crust mixture: 1-1/2 c. oatmeal 1-1/2 c. flour 1 c. brown sugar 1/2 tsp. baking soda 1 tsp. vanilla 1 c. shortening or margarine 1/2 c. nuts (optional) Rhubarb mixture: 3 c. cut rhubarb 1-1/2 c. sugar 2 T. cornstarch 1/2 c. water
Mix crust ingredients until crumbly. Pat 3/4 mixture into a 9x13-inch pan. Cover with rhubarb mixture. Sprinkle top with the remaining dry mixture. Bake at 375º for 30 minutes.
