Garlic Shallot Butter

5 Tbs. unsalted butter
1/4 minced shallots
2 Tbs. minced garlic
1/4 tsp. dried thyme
1/3 cup chardonnay wine
1 Tbs. lemon juice
1 tsp. dehydrated chicken stock base or crumbled bouillion cube
1/4 tsp. salt
pinch of ground white pepper

Grilled Red & Yellow Peppers

2 red bell peppers & 2 yellow bell peppers , halved, stems, seeds & veins removed

Grilled Red Onion

1 medium red onion, cut into 1/4-inch rings
1 Tbs. olive oil
1 tsp. soy sauce

For the Sandwiches

8 fresh Italian chicken sausages
2 Tbs. olive oil
1 cup marinara sauce
4 sandwich size foccacias
4 Tbs. Garlic shallot butter

Garlic Shallot Butter: Melt 1 Tbs butter in saucepan over medium-high heat. Add shallots, garlic & thyme and cook, stirring continuously, til it's lightly browned - about 7 minutes. Add the wine, lemon juice, chicken base, salt & pepper. Bring to a simmer & cook til the mixture has reduced to about 1/2 cup - 5-7 minutes. Toward the end, turn the heat to low and stir frequently to prevent scorching. Remove from hat quickly & thoroughly whisk in the remaining 4 Tbs. butter. Set aside. (you'll only use half - use the rest on sandwiches).
