One 12 oz. bag of broccoli florets
4 eggs
2 tbsp. onion soup mix
2 tbsp. mayonnaise
1/2 c. maztoh meal

Directions:
Directions:
Cook broccoli until soft and mash. Mix ingredients together, bake uncovered at 350 degrees for 40 minutes.

This is also good with cauliflower substituted for broccoli, although it needs to be made the day of. In the summer, I substitute with 2 large zucchini instead. It's a great and easy Shabbat kugel.
