I bunch spinach (about 1/4 pound) trimmed, washed, and dried
2 heads Bibb or Boston lettuce, separated into leaves
I can (14 ounces) hearts of palm, drained and cut into 1-inch pieces
2 tomatoes, cored and cut into wedges
1 cup small pitted ripe olives
I jar (2 ounces) pimientos. drained
Balsamic Dressing (recipe follows)

Directions:
Directions:
Line large round platter with spinach and lettuce. Arrange hearts of palm, tomatoes, olives, and pimientos on top of greens.

Drizzle Balsamic Dressing over salad.
