1 cup freshly cooked butternut squash
1 cup flour
1 cup sugar
2 tbsp. oil
1 tsp. vanilla extract
3 eggs
1/2 c. milk

Directions:
Directions:
Blend all ingredients and put into a greased 9x13 baking pan. Bake at 350 for about 35 minutes.

I cheat and use 1 pkg. frozen pureed squash from the grocery store. Substitute soy milk for milk if serving with meat. I've found it's easier to mix the wet ingredients first and then mix in the dry. I bake this in a glass pie plate, it turns out looking great for when you have guests. My kids LOVE this recipe!
