6 large egg yolks
6 T. sugar
1 fresh vanilla bean, split legthwise
1 1/2 cups whipping cream

6 teaspoons granulated sugar

Preheat oven to 350.

Whisk yolks and 6 T. sugar in medium bowl. Scrape the inside of the vanilla bean with a spoon into a small bowl and add a small portion of the cream. Mash the vanilla bean and the cream together until smooth. Add the remainder of the cream into the vanilla bean and gradually whisk the cream into the yolk and sugar mixture.

Pour mixture into 5-6 ramekins. Arrange ramekins into a large baking pan. Add enough boiling water into the pan to come 1/2 way up the ramekins.

Bake for 30 - 40 minutes. Do not over bake but make sure the custard does not jiggle like liquid. Remove ramekins from pan and allow custard to cool before refrigerating.

Before serving sprinkle 1 tsp. fine granulated sugar onto the top of each ramekin. Use a torch or broil for 2 minutes rotating until brown and caramelized.

Be careful not to create bubbles when whisking and be careful not to add any egg white. If you do not have fine granulated sugar for the top just put normal sugar in the food processor for a minute.
