1 lb. ground beef
1 t. cumin
1 can refried beans
1 c. Monterey Jack cheese, grated

Directions:
Directions:
Preheat oven to 350F.. In large skillet, brown ground beef; drain. Add cumin. Inn 9 x 13 casserole, spread beans. Spread ground beef mixture over beans. Heat in oven for 10 to 15 minutes, or in microwave for about 3 minutes, turning three times. Sprinkle with cheese. Return to oven for 3 to 5 minutes, or microwave for about 1 1/2 minutes or until cheese melts.
Top with your choice of:
shredded lettuce
chopped tomatoes
c;hopped olives
taco sauce
sour cream
guacamole

Serve with taco chips.

I use this recipe with my junior high exploratory students for protein lab. I found this recipe as a good substitute for Pizza slices when I had a student who could not eat gluten.
I like this recipe because it has plenty of items to keep all students busy with some part of the preparation and it is also delicious.
