2/3 c. minute rice
1/4 c. sugar
1/8 tsp. salt
1/4 tsp. nutmeg
2 1/2 c. milk
1 Tbsp. butter
1 tsp. vanilla

1 egg yolk
2 Tbsp. milk

Directions:
Directions:
Combine first seven ingredients in pan, bring to a boil. Cook 20 minutes over low heat, stirring. Beat 1 egg yolk into 2 Tbsp. milk. Slowly add to hot rice, stirring rapidly. Remove from heat.
