I bunch spinach (about % pound).
trimmed, washed, and dried
2 heads Bibb or Boston lettuce,
separated into leaves
I can (14 ounces) hearts of palm,
drained and cut into 1-inch pieces
2 tomatoes, cored and cut into wedges
1 cup small pitted ripe olives
I jar (2 ounces) pimientos. drained
l3alsamic Dressing (recipe follows)

Directions:
Directions:
Line large round platter with spinach and lettuce. Arrange hearts of palm, tomatoes, olives, and pimientOS on top of greens. Drizzle Balsamic Dressing over salad.
Makes 8 servings
