6 yellow summer squash, sliced
1 (lg.) yellow onion, sliced
1 c . Parmesan cheese, grated
2-3 (med.) tomatoes, diced
1-2 T. olive oil

Directions:
Directions:
Put squash, onion and tomatoes into large pot with enough water and olive oil to cover. Cook until vegetables are almost tender, then add Parmesan cheese. Continue cooking until vegetables are tender and cheese is melted. Add salt and pepper to taste.

Judy is the wife of Jack Hollenshead, Jr., the Editor of this cookbook. She is the daughter-in-law of the late Jack & Dorothy (Bellew) Hollenshead. This is one of Kendall's favorites which is wonderful since it is healthy. If you want to make it even more healthy, leave the cheese out of the recipe and it is still delicious.
