10 hard boiled eggs (diced),
1/3 c diced onion,
1/2 c diced celery,
8 tbsp mashed avocado,
1 tbsp Dijon mustard,
1 tsp paprika,
1/2 tsp black pepper,
pinch of salt or sea salt.

Directions:
Directions:
Mix all ingredients in a bowl. Chill and serve in a tomato with center/seeds removed, or on a bed of Romaine lettuce with cherry tomatoes.
