4 medium potatoes cut in large wedges
1 tbsp oil
1/4 tsp black pepper
1/8 tsp salt
2 cloves minced garlic (optional)

Directions:
Directions:
Place potatoes in large bowl, add cold water, let stand 15 minutes. Spray a nonstick baking sheet with oil. Drain potatoes, spread on double layer of paper towels, cover with paper towels and dry. Transfer potatoes to clean bowl. Sprinkle with oil, pepper and salt. Toss gently. Arrange seasoned potatoes in single layer on prepared baking sheet. Bake at 425 for 20 minutes, turning after 10. Sprinkle with garlic. Bake another 20 minutes, turn after 10.
Serve immediately.
