1 lb. bones, beef shank
Salt
Pepper
2 tbsp oil
2 tbsp butter
3 lb. onions, sliced
2 tbsp flour
French baguette
Mozzarella cheese, grated
Parmesan cheese

Directions:
Directions:
Boil bones, beef shank, salt and pepper, for 2 - 3 hours. Strain out bones. In a large stock pot, add oil and butter, sliced onions, and flour. Heat until onions are translucent. Add beef stock. Cook until flavours are well mixed.
Slice baguette, dry slices in oven.
Place soup in onion soup bowls, add baguette, cover with Mozzarella cheese, and finally Parmesan cheese.
Cook at 350 for 30 minutes or until cheese is golden brown.

A wonderful onion soup recipe, you can add a little sherry when the onions are cooking for more flavour.
